Breakfast bowl

Breakfast Bowl

Mitä on Schisandra-jauhe?

Jauhe maistuu melko karvaalta.

Riippuu paljon missä päin maailmaa milloinkin on.

Viikunan painosta jopa 55% on sokeria. Tästä syystä se onkin maailman makein hedelmä.

Fried Wild Rice For Lunch

Recipe for fried wild rice for lunch

Rice For Lunch

It's the time of the year when I need to check my daily diet. When travelling I want to taste new flavours and eat what I want without feeling quilty. And I think that's fine. In Finland though it easily gets out of my hands as all those familiar treats are available... The problem with me is that when I take that first piece of chocolate or cookie, I can't put a stop to it. I just continue eating until there's only an empty wrap left.

After I come back home I've often gained some extra stones & pebbles. Feeling heavy & dissapointed to myself - why did I do it again?! I'm in the age that it doesn't really matter how I look, but I would like to feel good & healthy.

I know how to eat healthy. And that doesn't mean I need to be starving and eat something tasteless or with a weird flavour. In my normal cooking I like to use spices such as garlic, chili, ginger & herbs. I don't add any sugar. I don't even have sugar in my cupboard. I guess that means I'm not sugarholic. I just have created a habbit of eating chocolate & cookies.

They say that it is important to have a certain rythm in eating. To have a proper breakfast, lunch, snack, dinner, snack  - that means five meals/day. For me it is too much to have both lunch and dinner, so I choose either of those depending on a day - lunch on weekdays, dinner on weekends.

One of my favourite ingredients is wild rice, the other one is red quinoa. Both are easy to mix with vegetables and chicken, fish, shrimps etc. Usually I boil some extra amount of rice so that I can use it next day as well with a different variation (or exactly same!).

Easy recipe for fried wild rice

Above there are the main ingredients for my fried wild rice dish. Sometimes I add chilly, cashews, spinach, tuna or whatever I happen to have in cupboard.

Fried Wild Rice (2 portions)

1 cup of wild rice
1tbl coconut oil
2-3 garlic cloves
1 red belly pepper
1 green pepper
a piece of fresh ginger
10 shrimps (big ones, more if small ones)
Black pepper
1tbl soya sauce

First I boil the water, add the rice and let it boil for about 10 mins, so that the grains are soft inside.

I chop the garlic cloves and peppers, put them in a hot pan with coconut oil. Let them cook so that they get softer, season with some black pepper, add the shrimps and rice, stir them a bit, and add the soya sauce. I don't add any salt as the soya sauce is pretty salty. Serve it in a bowl. Ready to eat!

Olen vaan kehittänyt itselleni tavan popsia herkkuja.

Sanotaan, että on tärkeää omata selkeä ateriarytmi. Aloittaa päivä kunnon aamiaisella, syödä lounas, välipala, illallinen ja iltapala eli viisi ateriaa päivässä. Kaksi isoa ateriaa päivässä on minulle liikaa. Valitsen jommankumman riippuen päivästä ja aikatauluista yleensä viikolla lounas ja viikonloppuisin päivällinen.

Yksi suosikkiraaka-aineista on villiriisi, toinen on muuten punainen quinoa.

En lisää suolaa ollenkaan, sillä soijakastike on jo itsessään melko suolaista. Laitan esille kulhoon ja alan syömään!

Blueberry Smoothie With Green Tea

Monday, June 12, 2017

I prepare a breakfast smoothie for almost every morning. I often make it ready on a day before. It's a healthy kick-start for any day. Usually I have coconut or soya milk as liquid, but this time I tried something different - I used green tea instead of milk.

~~~~
Mulla on tapana tehdä smoothie melkein joka aamiaiselle. Usein valmistan sen jo edellisenä iltana. Smoothie on terveellinen aloitus päivälle kuin päivälle. Tavallisesti käytän niissä nesteenä kookos- tai soijamaitoa, mutta tällä kertaa teinkin vähän erilaisemman smoothien ja käytin siinä maidon sijaan vihreää teetä.
Blueberry Smoothie With Green Tea
1/2 avocado
a bite of fresh ginger
a handful of green grapes (withour seeds!)
and another handful of blueberries
2 dl / cups jasmine green tea
Prepare the tea  in advance and let it cool. Mix all the ingredients in a blender until smooth. Drink it straight away or put in to fridge and enjoy it the next morning.
~~~~

Mustikka-vihreä tee smoothie

1/2 avokado
pala tuoretta inkivääriä
kourallinen vihreitä viinirypäleitä (ilman siemeniä!)
ja toinen kourallinen mustikoita
2dl vihreää teetä (jasmin-tee on oma suosikkini)

Valmista tee etukäteen niin ehtii jäähtyä kunnolla. Sekoita kaikki ainekset blenderissä kunnes seos on tasaista. Juo samantien tai pistä jääkaappiin odottamaan seuraavaa aamua.

Asparagus Omelet - Quick Lunch

Friday, May 5, 2017

 Asparagus is the ultimate spring veggie! On my previous post I told some benefits of this green superfood. Now I introduce my favourite spring time lunch - asparagus omelet.

This is how I make it:

A punch of green asparagus (basically as much as you like)
3 eggs
parmesan
salt & black pepper
fresh oregano and/or other herbs

Wash, peel if needed, cut into pieces and steam the asparagus for a couple of minutes.
Whisk the eggs, add some water (3 tbls), salt & pepper. Blend
Puor the egg mixture in a non-stick skillet, cook it in high heat for a few seconds, reduce the temperature to medium and cook until eggs are softly set, add parmesan, asparagus and herbs. Continue cooking for a couple of minutes.
Fold omelet in half and serve it.

Healthy, gluten free lunch with full of protein, fibre and vitamins.

Raw Cacao Smoothie

Wednesday, February 8, 2017

You might have already noticed that I'm a chocoholic. So you can imagine how happy I was when I realized that I could add some cacao nibs to my morning smoothie. This is a super delicious & healthy smoothie recipe!

Raw cacao smoothie

1 banana
a thumb of fresh ginger
1/2 tsp cinnamon powder
1/2 tsp turmeric powder
1/2 tsp cardamom
2-3 tbsp raw cacao nibs
coconut milk (or soya or almond milk)

Put all ingredients to a blender for about 30s until you got a nice & smooth consistency.

(FI) Olet jo ehkä huomannut, että mulle maistuu suklaa. Olen todellinen chocoholic. No, siitä syystä saatat arvata kuinka iloinen olin kun keksin lisätä kaakao nibsejä aamuiseen smoothieeni. Tässä resepti niin herkulliseen ja terveelliseen smoothieen.

Raakakaakaosmoothie

1 banaani
peukalonpään kokoinen pala tuoretta inkivääriä
1/2 tl jauhettua kanelia
1/2 tl jauhettua kurkumaa
1/2 tl kardemummaa
2-3 rkl kaakao-nibsejä
kookoamaitoa (tai soija- tai mantelimaitoa)

Laita kaikkiraaka-aineet tehosekoittimeen noin 30 sekunniksi kunnes rakenne on tarpeeksi tasaista.

What are raw cacao nibs?

Cacao nibs are the least processed and most natural form of chocolate. The taste is a bit bitter with a nutty flavour. And they are super healthy!

Cacao nibs are a good source of:
- antioxidants, which help fight off free radical damage in the body
- flavonoids
- fiber
- magnesium
- potassium

Cacao nibs
- can also fight cardiovascular disease
- improve your mood

I think these are pretty tremendous health benefits!

****

(FI) Mitä kaakao-nibsit oikein ovat?

Kaakao-nibsit ovat vähiten prosessoituja ja luonnollisinta suklaata. Maku on aavistuksen kitkerä ja pähkinäinen. Ja mikä parasta ne ovat superterveellisiä!

Kaakao-nibsit sisältävät runsaasti
- antioksidantteja
- flavonoideja
- kuituja
- magnesiumia
- potassiumia

Kaakao-nibsit
- voivat lisäksi auttaa taistelussa verisuonisairauksia vastaan
- kohentavat mileialaa

Mielestäni aika erinomaisia terveysetuja!

Yummy!

Why Do I Add Turmeric To My Smoothie?

Monday, August 8, 2016

I'm a fan of smoothies. Especially those made of fruit and berries. A smoothie is such a great and easy way to start a day. I have some ingredients that I always add to my morning smoothies and one of those is turmeric.

Why do I add turmeric to my smoothies?

For its health benefits, of course. It doesn't really give any flavour for my smoothies, a bit of yellowish colour though.
A couple of years ago I heard that turmeric is used for preventing and also curing cancer. That woke up my curiosity and I found even more health benefits of turmeric and decided to add turmeric powder in my smoothies - that's an easy way to use it.

These're the top 10 health benefits of turmeric:
  • Prevents cancer
  • Relieves arthritis
  • Controls diabetes
  • Reduces cholesterol levels
  • Immunity booster
  • Heals wound
  • Weight management
  • Prevents Alzheimer's disease
  • Improves digestion
  • Prevents liver disease

My morning smoothie with white currants
1 banana
2 handfuls of white currants
a bite of fresh ginger
1 spoonful of chia seeds
1/2 teaspoon of turmeric powder
1/2 teaspoon of cinnamon powder
1 teaspoon of lucuma powder
Coconut milk

All ingredients into a blender for a couple of seconds and the breakfast is ready. Very easy!

Turmeric is also an excellent source of iron and manganese as well as vitamin B6 and potassium.

Have you been using turmeric?

Red Berry Smoothie

Monday, July 4, 2016

I like to start my mornings with a self-made smoothie made of season's fruit and berries. Now there's a plenty to choose from at the local market. I decided to go with red berries and chose a bit sour but delicious red currants. Perfect for breakfast!

Red berry smoothie:
1 banana
red currant (as much as you like)
a piece of fresh ginger
1 small spoonful of lucuma powder
3 spoonful of chia seeds
1/2 small spoonful of cinnamon
1 small spoonful of coconut oil
coconut milk

Delicious!

Glutein-free

Friday, January 23, 2015

 One of my favourite glutein-free products is quinoa, especially red quinoa. if you boil a bigger portion in the beginning of week you can add some of it to salads etc during the week. This warm kind of salad that I made last night is delicious and easy to prepair, and you can basically add anything to it. This time I made it with these ingredients:

garlic, mushrooms, belly peppers, spinach, mozzarella, broccoli and quinoa, and seasoned it with black pepper & sea salt and fresh basil.

2 gloves of garlic, yellow belly pepper, mushrooms & spinach...

...red quinoa...

...broccoli & mozzarella...
(I had some cooked broccoli in my fridge from the previous night)

... black pepper, sea salt & fresh basil.

Yummy!

Energy Bombs

Monday, November 17, 2014

Got this wonderful recipe from a friend of mine. An awesome little snack to have on hand in the fridge when you need something to nibble on to give you a boost.

Spirulina, a type of algae, is packed with protein, essential fatty acids and B vitamins.

Unfortunately I don't have a food processor, but luckily my friend invite me to her place to make some nutty balls. Brought a package of dates and desiccated coconut and she had walnuts and spirulina.

Energy bombs
250g pitted dates
250 raw walnuts
3 teaspoons spirulina powder
desiccated coconut, to coat

Put the dates, walnuts and spirulina into a food processor, and process at full speed until a stiff paste forms.
Sprinkle the desiccated coconut on a plate and have another clean plate handy. Processing the ingredients at high speed will have squeezed the oil from the walnuts, so the paste will be very oily. Break off thumb-sized pieces of paste, roll them into balls, then roll in the desiccated coconut. Place the coated balls on a clean plate.

Once all the paste has been rolled into balls, place in the fridge for several hours, which will make them firmer and give them a fantastic chewy texture.

Delicious!
Don't eat them all at once - have one with afternoon coffee or tea.

Sain tämän ihastuttavan herkullisen reseptin ystävältäni. Todella kätevä jääkaapissa säilytettävä välipala, kun tarvitsen jotain pientä antamaan lisäpuhtia päivään.

Spirulina on proteiinia, tarpeellisia rasvahappoja ja B-vitamiineja sisaltävää levää.

Harmi, ettei itselläni ole monitoimikonetta, mutta onneksi ystäväni kutsui minut kotiinsa valmistamaan näitä pähkinäisiä palleroita. Vein mukanani paketillisen taateleita ja kookoshiutaleita ja häneltä löytyi saksanpähkinöitä ja spiruliina-jauhetta.

Energia pommit
250g kuivattuja, kivettömiä taateleita
250 raakoja saksanpähkinöitä
3 teelusikallista spirulina-jauhetta
kookoshiutaleita palleroiden pinnalle

Laita taatelit, päkkinät ja spirulina monitoimikoneeseen ja kone käyntiin täydellä teholla. Jatka kunnes seos on taikinamaista.
Sirottele kookoshiutaleet lautaselle ja aseta toinen puhdas lautanen viereen. Valmis taikina on öljyistä, sillä sekoitettaessa raaka-aineita täydellä teholla, pähkinöistä puristuu öljyä.

Herkullista!
Älä syö kaikkia kerralla, vaan säästä iltapäivän kahvi- tai teehetkiin.

Pure & Good In Budapest

Monday, July 28, 2014

On my morning run to Margit Island I noticed this new store on Pozsonyi Street. Later popped in and checked what they had. Spices, herbs, beans, rice, gluten free ingredients, healthy snacks... simply pure & good!
They have started the shop with no fancy decoration etc and step by step when the business grows they will add something extra to it. The main thing is the variety of products. They didn't yet have chia seeds, but added them on their list, so on my next visit there will probably be those on the shelf.
