Asparagus is the ultimate spring veggie! On my previous post I told some benefits of this green superfood. Now I introduce my favourite spring time lunch - asparagus omelet.
This is how I make it:
A punch of green asparagus (basically as much as you like)
3 eggs
parmesan
salt & black pepper
fresh oregano and/or other herbs
Wash, peel if needed, cut into pieces and steam the asparagus for a couple of minutes.
Whisk the eggs, add some water (3 tbls), salt & pepper. Blend
Puor the egg mixture in a non-stick skillet, cook it in high heat for a few seconds, reduce the temperature to medium and cook until eggs are softly set, add parmesan, asparagus and herbs. Continue cooking for a couple of minutes.
Fold omelet in half and serve it.
Healthy, gluten free lunch with full of protein, fibre and vitamins.
I love asparagus, any time of the day, all year round - so I'd definitely chose this for lunch if it was on a menu x

DeleteOmelettes are my go to meals when I come home tired from work and need to put something quick but not junk food-ish together. It is also great because I am able to stuff myself with vegetables, which I am not eating enough when it comes to the rest of my diet.
ReplyDeleteThat's exactly the same thing with me! Omelettes are my favourite as they are pretty easy to make, don't take too much time and are full of benefits.
DeleteOmelettes are a morning staple at our house. I love the idea of asparagus with a little bit of parmesan. It's colorful and healthy .. just in time for Spring!
