Home-made Cheese Cookies

I am a cookie monster. Nowadays I have tried to cut down my cookie consumption and instead of buying cookies at my groceries' I have started to bake my cookies.

First of all it needs a bit of effort to make them, secondly you know exactly what's inside them. That all means that I don't eat them so much and they are kind of healthier as there're no articial preservatives for example.

Sweet cookies are my all time favourite oens, but this afternoon I was more for savoury ones. The cheese cookies I baked were no means light & healthy...




Cheese cookies

100g parmesan
1 tbls flour (I used gluten-free)
1 tsp baking powder
75g butter
1 egg
50g blue cheese

Grate the parmesan. Add the flour & baking powder and then the butter (room temperature) and egg. Mix them all and crumble the blue cheese to the dough.
Line 2 baking sheets parchment paper. Scoop out dough with a teaspoon. Leave some space between the cookies as they will spread. Bake them in the preheated oven in 175 C for about 12 minutes, or until they got nice colour.





Super easy! Great with afternoon tea!


Gluten-free Waffles for Sunday Breakfast

I love these slow mornings when there's no rush to go anywhere, and there's enough time to make a delicious and a bit different breakfast. I baked a few waffles, added some whipped cream and raspberries. So delicious!

Gluten-free waffles

2 eggs
2 cups almond milk
2 cups gluten-free flour
4 tbls poppyseeds
1 tsp turmeric powder
1 tsp cinnamon powder
1/2 tsp cardamom

Preheat waffle iron to desidered temperature. Beat the eggs, stir in milk and seasonings, add flour and beat until blended.

I don't add any sugar to the waffles although I'm a fan of sweets. Somehow I just dont like to add any extra sugar to anything. Instead of almond milk you can also use soya or coconut milk, or cow's milk, of course. So these waffles of mine are not just gluten-free but also sugarfree and lactosefree.

Fresh berries with a huge dollop of freshly whipped cream on top is one of my all time favourite guilty pleasures. I love it without sugar as well, just the fresh taste of berries and cream.




Aivan ihania tällaiset aamut kun ei ole kiire mihinkään ja on aikaa paistaa vaikka vohveleita aamiaiseksi. Viikonloppuna vohveleiden kanssa maistuu tietty kermavaahto ja tuoreet vadelmat. Niin herkullista!

Gluteenittomat vohvelit

2 kananmunaa
2 dl mantelimaitoa
2 dl gluteenittomia jauhoja
4 rkl unikonsiemeniä
1 tl kurkumaa
1 tl kanelia
1/2 tl kardemummaa

Pistä vohvelirauta lämpenemään toivottuun lämpötilaan. vatkaa kananmunat, sekoita joukkoon maito ja mausteet. Lisää lopuksi jauhot ja sekoita kunnes seos on tasaista.

En lisää vohvelitaikinaan sokeria, vaikka makeasta tykkäänkin. Jotenkin sokeri ei mun mielestä sovi vohveleihin. Joskus lisään joukkoon orgaanista vaniljaa tuomaan makeutta. Mantelimaidon tilalla voi hyvin käyttää soijamaitoa tai kookosmaitoa ja tietty myös lehmänmaitoa. Nämä mun vohvelit ovat paitsi gluteenittomia myös sokerittomia ja laktoosittomia.

Tuoreet marjat ja iso kasa just vatkattua kermavaahtoa on ehdottomasti yksi mun suosikkikomboja. En koskaan lisää kermavaahtoonkaan sokeria. Marjojen ja kermavaahdon yhdistelmä on vaan niin herkullista! 



Light, Easy & Gluten-free Chocolate Souffle

I loved the delicious pre-xmas lunch what a friend of mine Andi had prepared the other day - btw, she is the mother of the super cute Daniel click click. Hadn't had Mexican food for ages - sorry, no pics of that, too hungry :D

Andi suggested that we should make the dessert together and she had chocolate souffle in her mind. Googled for recipes on internet and found out that there're plenty of them. Decided to try this one.


Chocolate souffle

110g dark & milk chocolate
10g butter
3 egg whites
2 tbs powdered (icing) sugar
1 egg yolk

1. Beat the egg yolk and powdered sugar until stiff. Melt the chocolate and mix with butter. Beat the egg whites until stiff. Add the egg yolk and sugar mixture to the melted chocolate and the beaten egg whites as well.

2. Pour the mousse into small greased ceramic souffle dishes. Bake at 220C degrees for app. 12 minutes. Don't make the dishes too full to avoid them not to pour over during the baking.

Serve it immediately with ice-cream & berries.
We had some frozen raspberries, but for some reason didn't want to wait them melt...

Unfortunately it doesn't look so good in pics but the taste was absolutely marvellous! Very easy to prepare, and it's totally gluten-free.
I think I will try to make these again for Xmas.






(FI) Ystäväni Andi oli kokannut tässä pari päivää sitten niin herkullisen joululounaan. Andi on muuten suloisen pikku-Danielin äiti klik klik. Siitä olikin aikaa kun olin viimeksi olin syönyt meksikolaista. Sori, ei kuvia. Oli niin kova nälkä ettei ehtinyt kuvata :D

Andi ehdotti että tehtäisiin jälkkäri yhdessä. Hänellä oli mielessä suklaakohokas, jota meistä kumpikaan ei ollut aikaisemmin valmistanut. Googlattiin reseptejä netistä. Sieltähän löytyi vaikka mitä versioita. Lopulta tämä ohje valikoitui lukuisten koukosta.


Suklaakohokas

110g tummaa- sekä maitosuklaata
10g voita
3 kananmunan valkuaista
2 rkl tomusokeria 
1 kananmunan keltuainen

1. Vatkaa keltuainen ja tomusokeri vaahdoksi. Sulata suklaa ja voi ja sekoita ne keskenään. Lisää keltuaisvaahto suklaaseokseen ja lisää lopuksi vaahdotetut valkuaiset.

2. Laita vaahto voideltuihin keraamisiin kohokasvuokiin. Paista 220C asteessa noin 12 minuuttia. Älä laita vuokia aivan täyteen, ettei kohokkaat paisu uunissa yli äyräittensä.

Tarjoile välittömästi jäätelön ja marjojen kera. Meillä oli pakastevadelmia, mutta jostain syystä emme jaksaneet odottaa niiden sulamista...

Vaitettavasti kohokkaat eivät näytä niin hyviltä näissä kuvissa, mutta maku oli taivaallinen! Todella helppo valmistaa ja nämä ovat täysin gluteenittomia. Taidan kokeilla reseptiä uudelleen ja valmistaa kohokkaita myös joulupöytään.

Kávétársaság - A Nice Cup Of Tea In Budapest

There's a new place for coffee and tea in the centre of Budapest at Nádor utca. The place is called Kávétársaság (something like 'coffee society' in English). It doesn't only serve tea & coffee but also sells them as well as high-quality coffee machines. The shop for the machines is downstairs. You can find tea, coffee and other items related to them in the middle of the shop.

Tried there White Pai Mutan tea by Swedish Johan & Nyström - also available in the shop! - and Northern Berries by the same company. Both excellent! And the gluten free chocolate cake was heavenly!

The interior of Kávétársaság is really beautiful and well-made. Lots of black and white - my favourite combo - and a hint of colour in the floor tiles. Gorgeous custom-made mirrors and nice pendant lamps hanging from the high ceiling.

There's a really nice new coffee shop called My Green Cup at Poszonyi ut 15, XIII Budapest. They have a good variety of teas as well :)
This area on Pest side has become nicely buzy & hip.




ps. the gluten-free cake is to die for...


Cauliflower Fries

 All you need is a cauliflower, olive oil, sea salt & black pepper, and an oven. 

  • Preheat oven to 200 degrees.
  • Wash and clean the cauliflower. cut off and discard the stem. cut hte cauliflower up into small pieces.
  • Place cauliflower pieces onto a baking sheet lined with parchment paper. Sprinkle salt & pepper and some olive oil on top.
  • Turn a couple of times during cooking until each piece has a nice brown colouring. The brower they are the better
  • Remove from oven and enjoy!
