Home-made Cheese Cookies

I am a cookie monster. Nowadays I have tried to cut down my cookie consumption and instead of buying cookies at my groceries' I have started to bake my cookies.

First of all it needs a bit of effort to make them, secondly you know exactly what's inside them. That all means that I don't eat them so much and they are kind of healthier as there're no articial preservatives for example.

Sweet cookies are my all time favourite oens, but this afternoon I was more for savoury ones. The cheese cookies I baked were no means light & healthy...




Cheese cookies

100g parmesan
1 tbls flour (I used gluten-free)
1 tsp baking powder
75g butter
1 egg
50g blue cheese

Grate the parmesan. Add the flour & baking powder and then the butter (room temperature) and egg. Mix them all and crumble the blue cheese to the dough.
Line 2 baking sheets parchment paper. Scoop out dough with a teaspoon. Leave some space between the cookies as they will spread. Bake them in the preheated oven in 175 C for about 12 minutes, or until they got nice colour.





Super easy! Great with afternoon tea!


Fancy A Scone Or Two?

Scones are the easiest English teatime treat.


Ingredients

225g flour
pinch of salt
55g butter
25g caster sugar
150ml milk
1 egg, beaten, to glaze

Preparation
  1. Heat the oven to 220C. Lightly grease a baking sheet.
  2. Mix together the flour and salt and rub in the butter.
  3. Stir in the sugar and then the milk to get a soft dough.
  4. Turn on to a floured work surface and knead very lightly. Pat out to a round 2cm thick. Use a 5cm cutter to stamp out rounds and place on a baking sheet. Lightly kneas together the rest of the dough and stamp out more scones to use it all up.
  5. Brush the tops of the scones with the beaten egg. Bake for 12-15 minutes until well risen and golden. 
  6. Cool on a wire rack. 









Moist, tender scones, sweet or savory, are perfect any time of the day - from breakfast to late-night snack. 

Glutein Free Cheese Cookies

A friend of mine gave me a book full of delicious glutein free recipes. One of my favourites is this "cheese cookie" recipe. So easy & quick to make. Unfortunately they also disappear just as quickly...

All you need:

1,5 dl almond flour
3 eggs
60g butter
paprika or chili powder 
225g grated Ceddar cheese
some coconut flour

Mix all the ingredients, and make about walnut size dumplings from it. Bake for about 15mins in 200C.

I have changed the amount of cheese & chili powder to make the cookies spicier, and left the coconut flour out as it made them too sweet.
