It's the time of the year when some of us get a flu. I'm one of them. Haven't suffered from a flu for ages - I guess it was in 2011 in Las Vegas when I had to stay in my hotel room for a couple of days watching HGTV and peeking out to watch the musical water show of Bellagio.
Anyways, the best way to avoid catching a nasty flu is, of course, eating heathy, sleeping well and washing hands often enough.
One of my favourite soups is carrot soup spiced with fresh ginger. That's a soup packed with vitamins. This time I added coconut milk and spicies such as cinnamon, turmeric and cayenne pepper to make it a bit richer for autumn. It is good & tasty without any coconut milk or any other cream as well.

(FI) Nyt on se aika vuodesta kun jotkut meistä saa kunnon flunssan. Olen yksi heistä. En olekaan ollut flunssan kourissa vuosiin. Taisi olla vuosi 2011 ja Las Vegas kun viimeksi podin tätä tautia. Silloin pari päivää meni ihan vaan hotellihuoneessa telkkarin sisustuskanavaa katsellen ja välillä ikkunasta Bellagion suihkulähde-show'ta.
Joka tapauksessa paras tapa välttää vilustumista on tietysti syödä terveellisesti, nukkua riittävästi ja pestä kädet joka käänteessä.
Yksi lempparikeitoistani on porkkanakeitto tuoreella inkiväärillä terästettynä. Tämä soppa on todellinen vitamiinipommi. Tällä kertaa lisäsin siihen kookosmaitoa sekä mausteita kuten kanelia, kurkumaa ja cayennepippuria, jotta keitosta tulisi syksyisen täyteläinen. Porkkansoppa on toki hyvää ja maukasta ilman tätä kookosmaitoa tai jotain muuta kermaa.
Carrot Ginger Soup
4-5 carrots
20-50g fresh ginger
2 gloves of garlic
1 onion
2 tbsp oil
2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp cayenne pepper
8 cups water
1 can of coconut milk (400ml)
1 tsp salt
Peel & dice carrots. Peel and grate ginger, crush garlic and chop onion.
Heat oil in a sauce pan. Add onion, ginger and garlic. Sauté them for 2 mins. Add carrots and spicies. Fry for 1 minute. Pour water and let it boil for 20 mins. Add coconut milk amd bring to a boil.
Use bamix to make the soup smooth, and salt.

Porkkana-inkiväärikeitto
4-5 porkkanaa
20-50g tuoretta inkivääriä
2 valkosipulinkynttä
1 sipuli
2 rkl öljyä
2 tl kurkumaa
1/2 tl kanelia
1/2 tl cayennepippuria
8dl vettä
1 tölkki kookosmaitoa (400ml)
1 tl suolaa
Kuori ja kuutioi porkkanat. Kuori ja raasta inkivääri, hienonna valkosipuli ja sipuli.
Kuumenna öljy kattilassa. Lisää sipuli. inkivääri ja valkosipuli. Kuullota 2 minsaa. Lisää porkkanat ja mausteet. Paista minuutti. Kaada joukkoon vesi ja keitä 20 minsaa. Lisää kookosmaito ja kiehauta.
Soseuta keitto ja mausta suolalla.

2 cups cashews
1 tbsp oil
1 tbsp honey
1 tsp powdered ginger
1/2 tsp seasalt
Heat oil in a skillet. Add cashews and honey, and rost them for 2-3 mins or until the honey has melted. Add powdered ginger and salt. Stir the mixture well and spread it on a parchment paper to cool down.

Lisäsin muutaman cashewpähkinän keiton päälle.
2 dl cashewpähkinöitä
1 rkl öljyä
1 rkl hunajaa
1 tl jauhettua inkivääriä
1/2 tl salt
Kuumenna öljy pannulla. Lisää pähkinät ja hunaja ja paista 2-3 minsaa tai kunnes hunaja on kokonaan sulanut. Lisää inkiväärijauhe ja suola. Sekoita niin että pähkinät maustuvat kauttaaltaan. Levitä jäähtymään leivinpaperille.

ReplyDeleteI love to add ginger when ever it's possible. It is so invigorating and you can adjust the depth of its taste easily by adding just a small bite or a bigger one, depending on your taste.

DeleteCarrot soup has to be one of my favourite this season. I make different variations of it with red split lentils, coriander and even butternut squash. I will definitely add some ginger to it next time and try your version. Thanks for sharing :)

DeleteWow! I am a soup lover.. but I haven't tried carrots and ginger match so far. Most of time, my favorites are pumpkin soup, mushroom or broccoli. There are times, I tried - hot ginger tea. But I'm sure gonna try this. Thanks for sharing.
