It would be great to be in London
and go to Hummingbird Bakery
for a cupcake or two...
Ingredients for 12 Red Velvet cupcakes:
60g unsalted butter at room temperature
150g caster sugar
1 egg
10g cocoa powder
20ml red foor colouring (Dr Oetker)
1/2 tesspoon vanilla extract
120ml buttermilk
150g plain flour
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
1,5 teaspoon white wine vinegar
Cream Cheese Frosting:
300g icing sugar, sifted
50g unsalted butter, at room temperature
125g cream cheese, cold
